Highlights

  • 30 minutes recipe
  • Sugar-free recipe using Sweetify
  • Rich in flavor and texture
  • Perfect for Janmashtami celebrations

Ingredients

(for 20 pieces of Pista Barfi)

  • 2 cups Pistachios (shelled and unsalted)
  • 1 cup Mawa (khoya)
  • 20g Sweetify stevia sweetener (equivalent to 140g sugar)
  • 2 tbsp Ghee
  • ¼ tsp Cardamom powder
  • A few strands of Saffron soaked in warm milk
  • 2 tbsp Almond slivers (for garnish)

Sugar Free Pista Barfi Recipe

Step 1: Grind the pistachios until they form a fine powder. Take care not to overgrind as this could cause the mixture to become sticky and exude oil.

Step 2: Add the mawa to the heated ghee in a nonstick pan. It should take about 5 to 7 minutes to roast the mawa on low heat until it turns light golden and exudes a nutty scent.

Step 3: Combine the roasted maka with the pistachio powder and stir thoroughly. Cook over low heat, stirring frequently, until the mixture begins to come together and pull away from the pan's sides.

Step 4: Include the soaking saffron threads, cardamom powder, and Sweetify stevia sweetener in the mixture. Until everything is well blended, stir constantly for an additional five minutes.

Step 5: Pour the mixture into a tray or square mold that has been lightly greased with ghee. Using a spatula, spread it evenly and level the surface.

Step 6: Gently press the almond slivers into the surface as a garnish. Allow the barfi to settle at room temperature.

Step 7: Slice the pista barfi into squares or diamonds and serve after it has set.

Points to Remember:

  • Keep in a dry, cold environment.
  • Best for Janmashtami Prashad.
  • For optimal flavor and texture, consume within a week.
