Ingredients:
(for 2 servings of the sugar-free jar lemon cheesecake)
- 4 Sugar-free digestive biscuits/ cookies
- ½ cup cream cheese softened to room temperature
- 1 tablespoon melted butter
- 2 tablespoons Sweetify stevia sweetener
- 2 lemons
How to Make:
Step 1: Crush the digestive biscuits/ cookies until the consistency resembles sand. Add these to a bowl of melted butter and mix until you get the base for the cheesecake which resembles wet sand.
Step 2: Now comes the cream cheese mixture. Mix the cream cheese, lemon juice, lemon zest and Sweetify stevia powder. Blend them all together on medium speed till you get a smooth and creamy consistency.
Step 3: Avengers Assemble. Ahem. You can now first make a base layer with the wet sand like mixture obtained in Step 1 and add the smooth & creamy cream cheese mixture obtained in Step 2 on top of it as layer 2. Layer 3 can consist of any toppings you prefer like fresh blueberries. You can chill it to have it cold.
