Call it a banana coconut milk cake if you will but it’s a supremely delicious and easy-to-make banana coconut sweet dish. Now you would ask, is shredded coconut good for diabetics? Well even if you didn’t ask, yes it is fine for diabetics. Let’s get into the recipe now.

Ingredients:

(a banana and coconut milk cake if you will)

  1. 4 cups of freshly grated coconut
  2. 4 teaspoons of Sweetify stevia sweetener
  3. 2 tablespoons of cashew paste
  4. 1 tablespoon of shredded almonds and pistachio each
  5. 1 ripened mashed banana

How to Make:

Step 1:  Take a kadhai and add the grated coconut, mashed banana and cashew paste.

Step 2: Mix well and roast it slowly until it thickens and attains a halwa-like consistency.

Step 3: Now add the shredded almonds and pistachios.

Step 4: Take a tray and spread the thick batter in it.

Step 5: Let it cool a little and cut it into whatever shape you want. Enjoy!
