Ingredients
(for 15 servings of sugar free dry fruit barfi)
- Two teaspoons of ghee
- Half a cup of chopped almonds
- Half a cup of chopped cashews
- Half a cup of chopped walnuts
- 3 tablespoons of pumpkin seeds
- 3 tablespoons of chopped pistachios
- 2 tablespoons of sunflower seeds
- 2 teaspoons of Sweetify stevia sweetener
- One and a half cups of seedless dates
- 2 tablespoons of chopped figs
- 2 tablespoons of raisins
- Half a teaspoon of cardamom powder
How to Make
Step 1: Take a pan and add 1 teaspoon of ghee, ½ cup of chopped almonds, ½ cup of chopped cashews, ½ cup of chopped walnuts, 3 tablespoons of pumpkin seeds, 3 tablespoons of chopped pistachios and 2 tablespoons of sunflower seeds.
Step 2: Roast on low flame until the nuts turn crunchy. Then keep it aside.
Step 3: Grind the one-and-a-half cups of seedless dates into a smooth paste.
Step 4: Take a large kadhai, add 1 teaspoon of ghee, 2 tablespoons of chopped dried anjeer, and 2 tablespoons of raisins.
Step 5: Roast on low flame until you can smell a nice aromatic smell.
Step 6: Add the smooth paste of the dates and cook on medium flame.
Step 7: Keep cooking and stirring till the mixture turns glossy.
Step 8: Add the roasted nuts kept aside in step 2, the 2 teaspoons of Sweetify stevia sweetener and also add the ½ teaspoon of cardamom powder and mix well.
Step 9: Keep mixing until the mixture starts to hold shape.
Step 10: Now let it cool slightly.
Step 11: Shape the mixture into laddoos or roll into a cylindrical log shape, refrigerate for 2 hours and then cut into slices (whatever size you prefer) and enjoy!
