We gained independence in 1947 and a little something else to celebrate the freedom. Yup, milk cake. Its origin can be traced back to 1947 in Rajasthan. And what a delicious beauty it is, uff. But, as always, our diabetic friends cannot enjoy it. So as we have always done, here is a sugar free milk cake recipe. A milk cake without sugar is just as good, don’t worry. But there is one doubt we have, does a sugar free milk cake come under the category of sugar free cakes or not?

Ingredients

  1. 2.5 liters of whole fat milk
  2. 40 to 45 grams of Sweetify stevia sweetener (42 grams in particular)
  3. 2 tablespoons of water
  4. ½ teaspoon of citric acid or 1 lemon
  5. ½ teaspoon cardamom powder

How to Make

Now, don’t get scared of the number of steps you see. It’s not as difficult as it looks. In fact, with 5 ingredients and the deliciousness it offers, it is probably one of the easiest sweets to make. So try it and tell us what you think.

Step 1:  Take two pans and divide the milk equally between them. Now reduce the milk in each to ⅓ of what is in the pan.

Step 2: After the milk in each pan is reduced to ⅓ of the initial amount, combine the remaining milk and let it boil. Don’t forget to keep stirring lest you risk the bottom of the pan getting burned.

(The reason why we separated and reduced the milk is to save time. You can reduce the whole 2.5 litres in one single pan too but it will just take longer, that is all.)

Step 3: Mix the ½ teaspoons of citric acid in the 2 tablespoons of water. After mixing well, add it to the reduced milk boiling in the pan.

Step 4: After this, the milk will curdle and the whey will be separated.

Step 5: Add Sweetify stevia sweetener and keep stirring until all the whey/ water content evaporates.

Step 6: Add the ½ teaspoon of cardamom powder and mix the mixture well.

Step 7: Take another pan and grease it with ghee. After this, transfer the mixture from before to this pan.

Step 8: You can press it firmly to shape it how you want. Now leave it to rest. For best results, the resting period should be 24 hours but if you can’t wait that long, 8 hours works too.

Step 9: For demolding, heat the pan on low heat for a few seconds and flip it onto a plate. The cake will smoothly slide out of the pan.

Step 10: Slice it however you want and enjoy! It’s so good.
